Our Brewing Philosophy:


At the New Bavaria Brewery we hand select quality ingredients and strive for consistency in all of our beers.  Some classic styles adhere to the purity laws while others stray and might be blended to create unique and subtle nuances, or a spin-off if you will on an old favorite.  Because we are a small Boutique Brewery we brew with extreme care and patience in every small batch we produce.  By using all natural, fresh ingredients we can produce beers with an artistic flair that imported beer cannot match.




Our Brewing Process:

Our wheat beers are conditioned with a yeast/sugar mixture called speise, providing natural carbonation for a crisp and refreshinng finish.  Our beers are made possible by incorporating open-top fermention which relieves the yeast of added pressure and allows for a more vital environment.  The "yeasties" are allowed to free-rise and form a dense foam cap that can be "skimmed" for top-cropping and then pitched to innoculate another brew.  These methods ensure a fresh flavor profile reminiscent of classic Bavarian Weissbier.   



Brewing with Oak:

Our creativity is further expressed by incorporating the flavor of the oak barrel. We have many options available because we brew in the heart of wine coutry in the Sonoma Valley.  We are lucky to have such a wide range of different types of oak (America, European, Hungarian) at our disposal.  The concentration of flavor is determined by the degree of toast (Aroma, medium, charred) of the barrel.  Lastly, the brewer must take into consideration the barrels history, specifically what liquid was in it previously, if anything (new or fresh barrel).
